Chocolate Making and ProcessingA large candy manufacturer chose IPACT to revamp all of the automation in their entire chocolate making area. Functional areas included two systems that weigh-up and mix ingredients, twelve (12) refiners, twelve (12) conches with one addition system, and a continuous processing system that included additions, and a sugar delivery system. IPACT provided the functional specifications, implementation, simulation, testing, and commissioning services for the twenty-nine (29) Level 1 processors and seven (7) HMI/SCADA terminals that control this facility. Production data is reported back to the customer’s Level 3 computer system. Since the installation of this upgrade, chocolate composition has for the first time consistently fallen within statistical control and tolerances, and the difference between reported and actual consumption of additives (e.g. cocoa butter) has become insignificant compared to what it was previously.
